Peanut Butter Pancakes with Peanut toppings and Honey Syrup

It was a nice Thanksgiving holiday morning without having to go to work, I felt so lazy to get up from the bed but my stomach was growling. Hungry. Time for breakfast. I opened the fridge and looked at all those leftover food from Thanksgiving. Thinking  “Nah, that is not the kind of food I want now, I need some real breakfast. I am making some pancakes. Yes, peanut butter pancakes.”

I grabbed some peanut butter from the cabinet, flour, egg, sugar, honey and butter. Starting my pancake preparation. About half an hour, breakfast was ready with a cup of hot coffee. Enjoy!

After Thanksgiving Turkey Porridge (Congee)

Every Thanksgiving we will prepare a lot of food and it is always impossible to finish all of them. There are always leftover food for the next couple of days, we will be eating the same thing over and over again, especially the big roasted turkey. So what will you do with the leftover turkey?

Instead of eating the same roasted turkey for the next day, you can actually prepare a new dish with the turkey meat. You can make a soup with the leftover turkey, adding some preferred vegetables as well as noodles. This will make a perfect noodle soup as all the turkey essence is preserved in the soup.  Another way that we usually prepare is to make the turkey porridge, or congee.  Having a hot bowl of porridge in the cold weather will definitely warm you up.

Sweet Potato with Crusted Pecan Streusel

Apparently when I made the Sweet Potato Pie with Marshmallow Meringue, I have some of the sweet potato fillings remained. It would be a big waste to throw it away. So I’ve turned the fillings into a new sweet potato dessert in a smaller portion, which is a pretty nice size for individual serving.

The main thing for this recipe is the crusted pecan streusel toppings. I like it the way it is prepared because the toppings will create a golden brown sugary crust topping to complement the creamy sweet potato fillings. You can use this recipe for any kind of pie toppings as well, just substitute with other nuts or add some spices if preferred.

Thanksgiving Green Bean Casserole

If you are planning to add an extra vegetable dish to your Thanksgiving dinner, you can either make a simple salad or you can try making the Green Bean Casserole. Green Bean Casserole is another classic side dish to serve with the Turkey.

I actually made a simple version of Green Bean Casserole because I didn’t have so much time preparing so many dishes at the same time. The main thing for the Green Bean Casserole preparation is the green beans, cream of mushroom, french fried onions and cheese. You can easily make them ahead of time. Potatoes Au Gratin with Bacon

Our Thanksgiving Turkey dinner wouldn’t be completed without a delicious potato side dish, just like a hamburger combo without french fries, it just doesn’t feel right. However there are tons of potato dish, I couldn’t really decide which kind should I go for. Finally I’ve decided to do something different than just a simple mashed potato, so I’ve made the Potatoes Au Gratin with Bacon Bits. Check out the step-by-step guide in the attached images.

Just to let you know, the word Gratin originates from French, usually referred to dish that is baked or broiled to create golden brown top crust by using ingredients such as cheese and crumbs. Au Gratin is actually a  popular food technique which can be used widely in preparing other foods such as vegetable, meat and others. Once you have learned to prepare au gratin technique, you can use it in other dishes as well.
