Thanksgiving Sweet Potato Pie with Marshmallow Meringue

I always make one of my favorite and easy desserts which is the sweet potato pie with marshmallows for Thanksgiving dinner. I personally like the natural sweetness in the sweet potato which makes it a decent dessert.  You can always bake them in the oven and eat it as is, with no extra sugar added. Usually if we are barbecuing, I will wrap up a couple of sweet potatoes in foil and bake them in the hot charcoal. The sweet potatoes will be ready in an hour. Then you can just peel the skin and eat it right away. That feels soooo good when you have a hot fresh sweet potato especially in the cold weather to warm up your cold hands and stomach.

Thanksgiving Rosemary Roasted Turkey with Stuffing and Mushroom Gravy

Hi folks, time really flies and it is getting closer to the end of  2009. Guess what? Thanksgiving is just around the corner. That means holiday is here and time for a gathering with family and friends. However since our family does not live with us in the United States, my roomies and I have decided to host an early Thanksgiving dinner for friends gathering this year.

Every Thanksgiving I am responsible to prepare the main dish which is the turkey. This year I’ve prepared the Rosemary Roasted Turkey with stuffing such as sausages, potatoes, carrots and apples. Also I’ve prepared the Mushroom Gravy to serve with the turkey.

Stir-fried Chicken with Wood Ears (香炒木耳鸡)

I was doing my regular grocery shopping at the Asian market and I happened to see the wood ear or black fungus.  It’s been a while since the last time I’ve cooked a dish with the wood ear. Perhaps it was a year ago or so.  So I just grabbed a pack of wood ears home.

Wood ear (木耳) is actually an edible fungus used mainly in Asian cuisine and they are sold in dried form.  Also known as tree ear, this fungus grows in masses on dead wood or elder tree and it resembles a human ear when it is fresh. As I know, the wood ear has no flavor of its own, but it will soak the flavors of the ingredients when it is cooked with.

ABC Soup

My mom has been telling me to have more soups habitually since childhood because she said soups are great for health benefits with purported rejuvenating and invigorating effects to our bodies. Therefore Chinese love to prepare soup as part of their daily meals as they believe soup contains the essentials of all  the ingredients in it.

One of the scrumptious soups that I grew up having is the ABC soup. It is simple and easy to prepare especially to those who are busy and working fulltime. Besides, it is a helpful and pleasant dish to kids who do not like to eat vegetables.

Stuffed Mushroom

One of the appetizers that I like to order when dining at “Olive Garden” (the Italian restaurant) is the “Stuffed Mushroom”. They have really good stuffed mushroom. I never thought that these ordinary and plain-looking white mushrooms can be tasted so good when they are cooked.

It is not difficult to prepare this savory dish once you have tried it for the first time.  Since the mushrooms are stuffed with cheese and bread crumbs filling , it is recommended to serve them hot.  You can prepare the stuffed mushrooms ahead of time and only start baking them 30 minutes before the party. I bet everyone will love it (except for those who don’t love cheese :P).
