Fried Honey Chicken (蜜糖鸡)

It was a lovely New Year weekend I had. Today would be the last day of holiday before heading back to work tomorrow and I decided to make the fried honey chicken for tonight dinner. It was one of those twenty plus dishes that my mom used to cook when she was an economic rice (杂饭) food hawker and I almost had it every weekend when I was helping her at her stand. Well, it was fourteen years ago.

I’ve used the chicken drumsticks for preparing this dish instead of breast for better display purpose. Seriously I don’t take that much of dark meats nowadays and I prefer white meats. Perhaps I’ve been Americanized as what my friends told me.

Ingredients:
2 chicken drumsticks (chopped in pieces)

For marinate:
4 tbsp honey
1 tbsp sesame oil
1 tsp sugar
1 tbsp soy sauce

For sauce:
5 tbsp honey
1 tsp sugar
1 tbsp ketchup
1 tsp corn starch
1/2 cup water

Preparation:

  1. Cut the drumsticks into pieces (as shown in the pictures).
  2. Marinate the cut meats overnight with honey, sesame oil, sugar and soy sauce.

Cooking Method:

For the chicken:

  1. Medium heat deep-fryer with enough deep-frying oil.
  2. Add in the marinated meats and deep fry them until golden brown color.
  3. Transfer meats to a plate with paper towels to absorb the oil.

For the sauce:

  1. Heat up a pan and pour in the honey, ketchup, sugar and water. Stir well.
  2. Thicken the sauce with corn starch water.
  3. Pour the sauce over the fried meats.

Serves hot.
