Lemon Chicken (柠檬鸡)

A friend of mine gave me a big bag of fresh lemons, hand picked from her lemon tree in the backyard two weeks ago. No matter how hard I tried to use them in making myself and roommates honey lemon juice drinks, in cooking, and even as an acid to clean the hot water dispenser, half bag of the lemons still remains.
Today, I walked into my kitchen and opened the fridge. When I was still thinking of what to prepare for my dinner, I saw a piece of chicken breast storing inside the fridge. Bingo! An idea just came across my mind. Since I wanted to finish the lemons before they perish, I asked myself what else I can cook other than making a simple and tasty lemon chicken dish.
Ingredients:
1 pc of chicken breast (diced)
1/4 cup cornstarch
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 cup water
2 egg yolks (beaten)
1 cup cooking oilLemon sauce:
1 cup water
1/3 cup lemon juice
2 1/2 tbsp light brown sugar
2 tbsp honey
1 tbsp chicken bouillon granules
1/4 tbsp ginger (minced)Cooking Method:
For the chicken:
- Pan heat the oil for a minute.
- Meanwhile, combine cornstarch, salt and pepper. Well mixed with water and egg yolks.
- Dip diced chicken meats into cornstarch-egg mixture.
- Fry the diced chicken meats in low heat until golden brown.
- Transfer the chicken meats to a plate with paper towel to absorb the oil.
For the sauce:
1. Combine all the ingredients in a saucepan.
2. Cook over medium heat for about 5 minutes until sauce boils. (Stirring while cooking)
One final step to finish the dish. Transfer the chicken meats to another plate and pour the hot lemon-glaze sauce onto it. Now, you can enjoy!
