Tofu with Ground Pork

I craved for something light and not heaty after gobbling too much of barbequed and fried foods over the long weekend. Cooking something like congee, tofu and veggie would be pleasing. I made my mind up to prepare myself a tofu dish (after I saw Bel’s Steamed Tofu with Pork Ribs 豆腐蒸排骨).

Tofu has a plain structure with very little flavor on its own. So normally it is paired with other ingredients to make a dish. This time I just cooked the tofu with ground pork. Quick and easy! On the other hand, tofu is low in calories and only little fat. It also features high protein and calcium. These gave me another reason for cooking it. Mexican Salsa & Guacamole with Tortilla Chips

Happy 4th of July weekend everyone! Hope all of you had an amazing weekend full of fun, laughter and most importantly great food. We went to the London Bridge at Lake Havasu, Arizona for a weekend getaway.  It was way too hot there, 100 degrees F and above. We were just like the roasted pigs in the hot oven, hot and heat steaming. However the best thing was just to stay in the water with a beer on hand, that felt so good. There were many families and friends out in the lake with boat party and barbecue all day long. Since we didn’t prepare for barbecue, we managed to go some food and hang out in the park by the lake in the evening waiting for the fireworks. Overall it was a good trip, it would be perfect if it was not that hot.  :P

I made some Salsa & Guacamole dip for Tortilla chips last weekend for a hot summer Sunday afternoon. It is always popular snack to munch on for any parties especially for hot days like these. It is really an easy recipe, no cooking is needed which is good, just some chopping and mixing to do. I usually serve it with Mexican Tortilla chips, but we bought a big bag of Five Grain Tortilla chips from Costco to tryout, it is thicker with grains, still taste good with the dips. This is definitely a great snack to prepare for barbecue, pool party, or even for the coming World Cup final this weekend. We are really excited and looking forward to it.

Fried Egg with Green Bean

The fried egg with green bean (also known as string bean or French bean) is certainly one of the many great foods of my childhood. Granny used to cook this from time to time for me and my brother when we were in primary school. We both loved it! Perhaps granny was old, she was only capable to make us some easy and quick foods but well, they were all yummy.

I heart green bean and egg. So both ingredients create a perfect and comfy dish for me. Unlike the long bean, the green bean has a strong texture which makes it extraordinary. It will remain its crunchiness after it has been cooked. In addition, the greenish color of it tempts me to love it so much.

Chinese Arrowroot Soup (粉葛湯)

The Chinese Arrowroot Soup (粉葛湯), many people may not have heard of or taste of arrowroot or the soup. The Arrowroot is a type of root plant similar to yucca, taro or potato root plants. So you can find it in the produce sections with the potato, yucca or taro. However the arrowroot is harder in texture and it is extensively starchy than potato. When it is cut up, it has patterns on surface that looks like the ages of a tree trunk.

The arrowroot is high in protein and fiber which is very beneficial to our body. Since the arrowroot is very fulfilling, sometimes we will make good old pot of soup as substitution of our meals as well. I like to drink the soup more than eating the arrowroot actually as the soup is really sweet and tasty. We cook the soup by adding in seafood ingredients such as dried oysters and dried squids, this makes the soup so refreshing sweet with the natural sweetness from dried seafood. You can omit if you don’t like seafood, just add in more pork ribs or pork bones.

Stuffed Minced Pork with Bitter Melon (蒸苦瓜釀肉)

Eric forwarded me an email with even more bitter gourd or bitter melon recipes. We are really not big fans, however it’s summer time, the weather is getting really hot. We know bitter melon is definitely one of the vegetables that could help to cool down your internal body heat. In fact it is very beneficial to your liver and stomach digestion, as well as high level of vitamin C. My coworker even taught me to blend bitter melon juice with honey for a nice cooling drink which is pretty good. I was thinking to make the drink but Eric doesn’t like it, so instead I tried one of the recipe he requested, which is the Steamed Stuffed Minced Pork with Bitter Melon (蒸苦瓜釀肉).

This recipe is similar to one of the Chinese Hakka recipe of Stuffed Tofu and other vegetables (釀豆腐), except this recipe uses only minced pork and it is steamed to cook. Basically this is an easy recipe, just mix and marinate the minced pork, then stuff it into the melon pieces and steam. The bitter melon are crisp, bitter yet so refreshing with just the natural sweet broth from the minced pork itself, no other seasoning is added.  If you like, you can always make a dipping sauce with soy sauce or soy sauce paste, sugar and few drips of sesame oil, add some chili and minced garlic if desired.
