Chinese Egg Roll (炸春卷)

One of my favor party starters is Chinese egg roll. It is made by wrapping a combination of vegetables and meat in a sheet of dough, and then it is deep fried until golden brown. I love eating it since I was a kiddo. Well, I suppose everyone especially kids like the crispy food. I still remember my family always prepared this dish during the Chinese New Year. My sisters and I would help my mom to wrap the egg rolls, and then my mom would deep fry them. Believe it or not, I could finish up 20 egg rolls continuously in less than 10 minutes.

Since my home isn’t equipped with a fryer, it took me quite sometimes to deep fry all the rolls. For those with a fryer at home, you have advantage of doing this. Anyway, if you never try this recipe before, I personally recommend you to at least try making it once at home even you don’t have the fryer. Trust me, you will enjoy toward the last bite of the last roll!

After Thanksgiving Turkey Porridge (Congee)

Every Thanksgiving we will prepare a lot of food and it is always impossible to finish all of them. There are always leftover food for the next couple of days, we will be eating the same thing over and over again, especially the big roasted turkey. So what will you do with the leftover turkey?

Instead of eating the same roasted turkey for the next day, you can actually prepare a new dish with the turkey meat. You can make a soup with the leftover turkey, adding some preferred vegetables as well as noodles. This will make a perfect noodle soup as all the turkey essence is preserved in the soup.  Another way that we usually prepare is to make the turkey porridge, or congee.  Having a hot bowl of porridge in the cold weather will definitely warm you up.

ABC Soup

My mom has been telling me to have more soups habitually since childhood because she said soups are great for health benefits with purported rejuvenating and invigorating effects to our bodies. Therefore Chinese love to prepare soup as part of their daily meals as they believe soup contains the essentials of all  the ingredients in it.

One of the scrumptious soups that I grew up having is the ABC soup. It is simple and easy to prepare especially to those who are busy and working fulltime. Besides, it is a helpful and pleasant dish to kids who do not like to eat vegetables.

Curry Chicken (咖哩鸡)

Curry is a famous daily food in Asia. Especially curry chicken is  top ranked because chicken can be served to all religions as some religions have restrictions on food. You can see curry chicken dishes everywhere in food stands, hawker stalls or restaurants. Common enough but very delicious.

When I was still a 3rd grader, my family loves to picnic at the beach. I remembered my mom always prepare curry chicken to bring along for picnic. Curry gave me full favor of spices, as well as my childhood family memories.   The curry chicken sauce is a good to serve with a variety of food, with rice,  bread, noodle or even Chinese pan cake.
