Stir-fry Chicken with Onion

One of the dishes I love the most was the stir-fry chicken with onion when dining at Dennis’s place 2 weeks ago. I thought it’s really good. He made this dish by using the chicken breast and surprisingly the meats were tender, succulent, and delicious. As we know the chicken breast is always the toughest part of the chicken, yet it is the healthiest.

It is always fun to learn something new and I asked Dennis about his secret of tendering the chicken breast. He told me the trick is in the marination and the cooking technique. Egg white was what he added in the marinade to tenderize the chicken breast and of course he stressed the cooking technique is very important in order to prevent overcooking or undercooking the meat.

Lemon Chicken (柠檬鸡)

A friend of mine gave me a big bag of fresh lemons, hand picked from her lemon tree in the backyard two weeks ago. No matter how hard I tried to use them in making myself and roommates honey lemon juice drinks, in cooking, and even as an acid to clean the hot water dispenser, half  bag of the lemons still remains.

Today, I walked into my kitchen and opened the fridge. When I was still thinking of what to prepare for my dinner, I saw a piece of chicken breast storing inside the fridge.  Bingo! An idea just came across my mind. Since I wanted to finish the lemons before they perish, I asked myself what else I can cook other than making a simple and tasty lemon chicken dish.

Nasi Goreng Pattaya (蛋包飯)

Hey guys, party was over and it is time to get ready for accommodating the new year of 2010.  Unfortunately, I had a minor problem so called “Party Aftermath” - leftover rice. How to deal with it? Porridge or fried rice? It has been a while since we made the Indonesian Fried Rice, so I decided to go for fried rice. This time I’ve prepare the Nasi Goreng Pattaya.

Nasi goreng pattaya, or simply nasi pattaya, is one of the common dishes around Malaysia which usually can be found at Malay hawker stalls. In Malay, nasi means rice and goreng means fry. So, you can name it Rice Pattaya as well.  The name comes from Pattaya, Thailand. It is actually a chicken fried rice wrapped with fried egg and usually served with chili sauce and cucumber.

Fried Honey Chicken (蜜糖鸡)

It was a lovely New Year weekend I had. Today would be the last day of holiday before heading back to work tomorrow and I decided to make the fried honey chicken for tonight dinner. It was one of those twenty plus dishes that my mom used to cook when she was an economic rice (杂饭) food hawker and I almost had it every weekend when I was helping her at her stand. Well, it was fourteen years ago.

Stir-fried Chicken with Wood Ears (香炒木耳鸡)

I was doing my regular grocery shopping at the Asian market and I happened to see the wood ear or black fungus.  It’s been a while since the last time I’ve cooked a dish with the wood ear. Perhaps it was a year ago or so.  So I just grabbed a pack of wood ears home.

Wood ear (木耳) is actually an edible fungus used mainly in Asian cuisine and they are sold in dried form.  Also known as tree ear, this fungus grows in masses on dead wood or elder tree and it resembles a human ear when it is fresh. As I know, the wood ear has no flavor of its own, but it will soak the flavors of the ingredients when it is cooked with.
